Grilled Corn

Peal back the husks but don’t remove it from the ear, take off excess silk. Butter corn, and pull back husks over corn, tie with string or a long piece of corn husk. Soak in ice water for 10 minutes (or 20-30 if you have time) while you prepare the coals. Grill for 15-20 minutes, turning every 3 to 4 minutes. Husks might get charred. Pull back husks with oven mitts. Variation: you can put olive oil and herbs on before pulling the husks up. Lime juice and cayenne pepper are another option. Or you can leave the butter off while roasting and put it on when the cooking is done.

Neiman Marchus Cookies (Recipe may be halved)

2 c. butter
2 c. sugar
2 c. brown sugar
4 eggs
2 tsp. vanilla
4 c. flour
5 c. blended oatmeal***
1 tsp. salt
2 tsp. baking powder
2 tsp. soda
24 oz. chocolate chips
1 8 oz Hershey Bar (grated)
3 c. chopped nuts (your choice) [pecans are great]

***Measure oatmeal and blend in a blender to a fine powder.

Cream the butter and both sugars. Add eggs and vanilla. Mix together with flour, oatmeal, salt, baking powder, and baking soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies.
