Alan's Sauce Recipe
Alan's Sauce Recipe (made 11/6/08 - good)
3 carrots
2 celery stalks
1/2 medium red onion
58 oz. canned whole roma tomatoes w/juice no seeds
2 T capers
4 T olive oil
1/2 c dried onions
2 T garlic powder
1 1/2 T oregano
1 1/2 T thyme
2 T basil
1 1/2 tsp white pepper
6 oz tomato paste
1 1/2 T sugar
2 tsp salt
Chop carrots, celery, red onion, and canned tomatoes. Add to 9x13 baking dish. Stir in capers, olive oil, dried onion, garlic powder, oregano, thyme, basil, and white pepper. Bake at 300 degrees for 1 hour stirring every 20 minutes.
Remove from oven and let cool. Place in blender and puree. While blending, add tomato paste and sugar and salt to taste. Place in sauce pan and cook at medium low heat for 15 minutes. Makes about 6 cups.
